Crock Pot Chicken Soup

I make something in the slow cooker every week, and now that Fall is here I've got a lot of soup recipes to start trying out! This is one of our favorites to make in early Fall. The potatoes make it feel festive and add a fun flavor. For a printer friendly version, click here. Or hover over the image above to pin it for later.

  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 cup peeled and cubed sweet potatoes

  • 2 teaspoon sea salt
  • 1 teaspoon black pepper
  • 2 teaspoon basil
  • 1 teaspoon thyme
  • Fresh parsley to taste (optional)

Preparation

  1. Place all ingredients in slow cooker.
  2. Cook until chicken and vegetables are done, about 6 hours on low or 4 hours on high.
  3. Remove chicken breasts and shred with forks. Return to pot and mix.
